Five limestone hills named for the five elements, of which only one is climbed. Caves cut into it hold Buddhist shrines, and in the largest the roof is pierced so that shafts of daylight drop onto the altar around midday. A lift covers the first level if the steps look unappealing; the caves above it do not have that option.
The bulk of the day — roughly two and a half hours — is spent walking and eating in the old town. A sandwich from a bakery, a seat at a neighbourhood café, and the central market to see the ingredients behind everything you have just tasted.
Ask your guide about cao lau. It is Hoi An's own noodle dish and effectively cannot be made anywhere else: the recipe calls for water drawn from one particular well in town and lye from wood ash, which is why it never quite works elsewhere in Vietnam.
